A Kansas City bakery makes a wonderful dense and sweet loaf its calls Orchard bread. The ingredients include organic wheat flour, levain, apricots, apples, raisins, walnuts, sea salt, yeast and malt. The loaf gets very dark on the outside, but it does not have a burned taste and the crumb is sturdy, but not too heavy. I’ve not had any luck finding any recipies like this bread. This is a yeast bread, but my searches for these ingredients have brought up mainly quick bread recipes. The bakery is only open three days a week and is far from my home (it used to work nearby and got hooked), so I’d like to be able to make something close to this loaf myself at home.
